Will other users be able to see my e-mails?
It depends on each user's permissions. Basic users will only see communications (e-mail is a type of communication) that they create or that are assigned to them by an account admin. Communications are viewable on the Communications tab, the Activity Log on a contact's detail page, and on the Calendar tab, if you opt to "show" communications.
